Q.5
ICAR AIEEA PG 2024 - Fisheries Science (Q.51)
Statement Based +4 −1

Given below are two statements

Statement (I) : Reduction of pH during spoilage reduces water holding capacity of proteins.
Statement (II) : pH does not have any role in changes occurring in properties of proteins and enzymes.

In light of the above statements, choose the most appropriate answer from the options given below:

Statement (I) is correct: Post-mortem accumulation of lactic acid drives muscle pH downward toward the isoelectric point of actomyosin (~5.3–5.5), neutralizing surface net electrical charge and drastically reducing muscle protein water holding capacity (WHC). Statement (II) is completely incorrect: pH is one of the most critical thermodynamic determinants governing protein quaternary structure, net charge, denaturation, and enzymatic activity.
