In thermal properties of food and biological materials:
Thermal diffusivity (
\(\alpha\))\lt /strong\gt measures the ability of a material to conduct thermal energy relative to its ability to store thermal energy: \[ \alpha = \frac{k}{\rho \cdot c_p} \]
Where:
\(k\) = Thermal conductivity (A)
\(\rho\) = Mass density (B) \(c_p\) = Specific heat capacity (C) For agricultural and food products, \lt strong\gt Moisture content (D)\lt /strong\gt strongly governs the values of \(k\), \(\rho\), and \(c_p\) (e.g., Siebel's and Dickerson's equations), directly altering the net thermal diffusivity.
Therefore, thermal diffusivity depends upon (A), (B), (C) and (D).
