Reason (R) is false: Far from inhibiting microbes, this nutrient-dense aqueous surface layer provides an ideal substrate and culture medium for psychrotrophic spoilage bacteria (Pseudomonas, Shewanella), which rapidly proliferate and penetrate muscle tissue.
