Thermostabilization is an egg preservation method developed by Funk where shell eggs are immersed in warm water (around $54\text{ to }60^\circ\text{C}$ for 10-15 minutes) or hot oil. This mild thermal treatment coagulates a microscopic thin film of albumen (egg white protein) directly beneath the inner shell membrane, physically sealing shell pores against microbial penetration and moisture/$\text{CO}_2$ loss while stabilizing thick albumen quality.
